Since we changed the menu at Novena a few months back we tried to do something different: using Inaniwa udon for our Beef and Pork udon instead of the typical boring thick udon Singaporeans are familiar with. Inaniwa udon is a dry noodle so is actually flat rather than the typical round udon shape. It is made in Akita Prefecture in Northern Japan and is widely considered one of the highest quality udon made in the country.
Back to Singapore, we describe the noodle as "thin udon" for simplicity but there are feedbacks that feels we are passing off "Chinese noodles as udon to cut cost" and refuse to accept our explanation this is actually considered good stuff by the Japanese....
